Kulfi - Indian Dessert ((Pistachios Ice Cream)


Ingredients
Sweetened Condensed Milk - 14 oz
Evaporated Milk – 12 oz
Heavy Whipping Cream – 16 oz
Cool Whip Whipped Topping - 16 oz
Saffron (Kesar) – 1 big pinch
Sugar – 1 tsp
Cashews, Pistachios, Almonds - 1/2 cup, coarsely ground
Preparation
1.With a mortar and pestal, grind together Sugar and Saffron.
2.In a large mixing bowl, combine Sweetened Condensed Milk, Evaporated Milk, Heavy Whipping Cream and Cool Whip.
3.Using an electric hand blender (or by hand), gently mix all ingredients together.
4.Add in Saffron and Sugar mixture and Nuts. Mix well.
5.Pour mixture into small dixie style plastic cups. Cover cups with foil and insert a wooden popsicle stick into the center.
6.Freeze Kulfi for at least 4 – 6 hours, preferably overnight.
7.Serves 20- 25

Sambar Powder - South Indian Spice Powder



Ingredients
Coriander seeds – 1 cup
Dried red chillies – 2 cups
Channa dal – ¼ cup
Urad dal – ¼ cup
Fenugreek seeds – ¼ cup
Preparation
1.Dry roast all the ingredients until they give a nice aroma.(dals should turn pale brown color).
2.Let it cool and dry grind everything together and store in an air tight container.

Strawberry Milkshake


Ingredients
Strawberries-1/2 pound
Milk- 1 cup
Honey- 1tblspn
Sugar-1tspn (optional)
Ice cubes
Preparation
1.In a blender, combine ice cubes, strawberries, milk,sugar and honey. Blend until smooth. Pour into glass and enjoy!

Baked Cauliflower - Simple Vegetarian Recipe

Ingredients
White Cauliflower (large)-1 
Onions(medium)-2 (chopped) 
Ginger Garlic Paste – 1 tspn
Coriander Powder-1tspn 
Chili Powder-1tspn 
Turmeric Powder –1/4 tspn
Garam Masala Powder –1/2 tspn
Curd –5tspn
Olive oil-3 to 4 tbspn 
Salt to taste

Preparation
1.Preheat the oven to 250°C.                                                                                                             
2.Cut cauliflower into large florets. Wash and wipe the pieces dry
3.Heat oil in a pan
4.Fry the cauliflower for 3 minutes on low flame. Remove and keep aside.
5.Again heat oil in a pan and add onions. Fry them till they turn light brown in color.
6.Add ginger-garlic paste, coriander powder, chili powder, turmeric powder and garam masala powder. Stir fry for 2 minutes.
7.Add curd and salt and sauté for 1 minute
8.Mix the cauliflower in it and bake the preparation in the oven for 10-15 minutes.
9.Serve hot.

Kothu Parotta - Spiced Indian Bread Pieces


Ingredients
Parotta – 4 (cooked and cut into small bite size pieces)
Olive oil  - 2 tblspn
Mustard seeds- ¼ tspn
Curry leaves – A spring
Ginger –1”piece(minced)
Onion (medium size)–1 ( chopped) 
Green chillies – 4 (chopped)
Tomato(medium size) – 2 (chopped)
Red chilli powder – 1 tspn
Turmeric powder- ½ tspn
Coriander powder- 1 tspn
Salt to taste
A few coriander leaves
Preparation
1.Heat oil in a  pan and splutter mustard seeds.
2.Saute onions, ginger,curry leaves and green chillies until the onions turn translucent.
3.Add the chopped tomatoes and allow it to cook until soft .
4.Add chilli powder,turmeric powder and coriander powder . Stir fry for a minute.
5.Add the Parotta pieces and stir fry on high heat for a few minutes.
6.Switch off the heat and garnish with coriander leaves.

Serve with Raita.

Paneer Kabab(cottage cheese Tikka) -Indian Appetizer


Ingredients
Paneer pieces (cut into a 2" squares)- 8 –10
Bell pepper (cut into a 2”squares)-1
Onion (Make into 8 pieces)-2
Button Mushroom – 8-10 
Cherry tomatoes-6 or tomatoes-2 (cut into 2”squares)
Red chilli powder –1  tspn
Turmeric powder – ½ tspn
Coriander powder- 1 tspn
Cumin powder-1/2 tspn
Ginger garlic paste- 1 tspn
Curd(Yogurt) – 4-5 tblspn
Salt to taste
Wooden skewers
Preparation
1.Soak the wooden skewers in water for 2 hours. This prevents the skewer from burning when broiling the kebabs.
2.Mix the yogurt with the coriander powder, cumin powder, chilli powder and tumeric powders and garlic paste. Add salt to taste. Whisk to get a smooth paste.
3.Add the cubes of paneer to this paste and coat well. Allow to marinate for several hours(about 2 hours min)
4.Also marinate the bell pepper,onion,mushroom and cherry tomatoes with the remaining paste( marinades).
5.Sew the marinated paneer cubes, mushrooms, cherry tomatoes,bell pepper and onion pieces one after the other onto skewer.
6.Place the skewers on a foil lined baking sheet .Broil them for 10 minutes on high and turn them around and broil for another 10 minutes.
7.Garnish with the lemon slices and coriander leaves, and serve hot

Serve with mint chutney or coriander chutney.
